Wine Pairing Dinner

A few weeks ago we coordinated a very special wine dinner in Timnath, Colorado. Tiffany Rebecca took photos of the gorgeous evening as Smith Story Wine Cellar owners talked to the guests about each different wine they presented + Honest Eats served a delicious menu. Let us walk you through the day!

First, we set up our Courtney Cyr Design + Event farmhouse table and chair rentals in the beautiful backyard of a Timnath home.

Then we styled each table setting with a napkin knot to encourage a laid back style, paired with a wood plate to keep the party environmentally friendly. We placed a wine glass at each setting as well, and finished the setting off with a menu so that each guest could see what the night ahead was going to bring. To finish up the table design, we placed a few wine tasting spittoons as well as all of the bright floral arrangements by Beet + Yarrow down the middle of the two long tables. This was the perfect design for this type of event.

After this, we set up the welcome table with a few jaw dropping bouquets by Beet + Yarrow, a wine glass for every guest to be greeted with and put a few bottles of Smith Story Wine Cellar’s Pinot Noir Rose and Chardonnay on ice to be ready to serve to guests. As each guest arrived they received their first tasting of Pinot Noir Rose, then they mingled, and after a while sat down to enjoy the dinner portion of the evening.


The owners of Smith Story introduced themselves and talked about how the evening would flow - wine would be introduced and food would follow. First up, the Chardonnay was served with the amuse - a smoked vegetable and tuna crepe bundle + a potato cup with tomato bacon jam and parmesan tuile.

The next wine that was poured was a Semillon. This was paired with the first course - salmon belly; cured and smoked, crisped up with warm fingerling potatoes and creme fraische as well as a stuffed onion ring; breaded and fried, filled with jalapeno cream cheese.

Next to the plate was the second course - panzanella salad; roasted roots and brassicas, lemon pepper vinaigrette, French boule croutons, candied pecans, goat cheese, and fried garlic panisse. This colorful plate was served with Pinot Noir.

Moving on to our favorite course of the evening, the third course. A delicious Cabernet Franc was presented and poured, and plates were served. Butternut squash agnolotti; chevre, pancetta, sage butter, tomato broth, and toasted walnuts. The plate also carried a stuffed rigatoni with mushroom sugo and shaved brussel sprouts. 

Next, the main dinner course was prepared and sent out to the guests. Beef Brisket; caramelized onion BBQ, creamy polenta, and a kale + apple slaw along with turkey roulade; bacon and charred corn relish topped with cotija cheese. The wine perfect for this portion of the meal was Smith Story’s Merlot. 

And finally - we made it to dessert! A flight of espresso chocolate mousse, bacon cookies (yes, we thought this sounded strange too, but they were incredible!) and lemon bars. All paired with a Cabernet Sauvignon. 

 
Wine Pairing Private Event

Yum! As dinner concluded, the wine drinking of course did not. The tea light candles were lit to add some extra ambiance and the guests continued to enjoy each other’s company until the night was over. It was a wonderful evening for folks to just enjoy each other and just relax as they w i n e d + d i n e d. Here at Courtney Cyr Design + Events, we dream of more events like this.
